Mussels and Shrimp Tomato Pasta

Ingredients

  1. 1 lbspaghetti or linguine pasta
  2. 1 tbspextra virgin olive oil
  3. 4garlic cloves, minced
  4. 1medium yellow onion chopped
  5. 1/4 tspdried chilli flakes
  6. 2 tspsalt
  7. 1 tspdried oregano
  8. 20-25mussels no shells
  9. 20-25peeled shrimp
  10. 6medium tomatoes, deseeded, finely chopped
  11. 1 cupwhite wine
  12. 2 tbspchopped fresh flat-leaf parsley leaves

Cooking Instructions

    Cook pasta in a large saucepan of boiling, salted water following packet directions, until tender. Drain, reserving 1/2 cup cooking liquid. Return pasta to pan.

    Meanwhile, heat oil in a large frying pan over medium-high heat. Add garlic, onion and chilli. Cook for 1 minute or until fragrant. Add mussels and shrimp. Cook, stirring, for 2 to 3 minutes or until pink and cooked through. Add tomato and white wine. Add oregano and salt. Cook for 2 minutes or until heated through.

    Add pasta to the sauce. Stir through parsley. Serve.
