Cooking Instructions

Take 2 tbsp each of butterfly pea flowers in a separate bowl and pour about 3 tbsp hot water in each bowl.

Cover and keep the flowers aside for release it's colour for at least 20 minutes.

After 20 minutes strain and keep aside butterfly pea water for add to the phirni while it's cooking.

Wash and soak the rice for 15 minutes. After 15 minutes Drain water and grind rice for make paste.

Boil the milk and add rice paste. Now add the first batch of butterfly pea water. Cook for 5 minutes on medium flame. Meanwhile add the vanilla vanilla extract too.

Keep stirring frequently. Once the rice gets cooked add the milkmaid, cardamom powder and the second batch of butterfly pea water. Cook on medium flame till phirni thickenes.

Remove from heat and pour it in the serving bowl. You can pour this in earthen bowl for better taste. Garnish with chopped almonds and pistachios. Keep it in fridge and serve chilled.
