Stuffed Pepper Casserole

I love stuffed peppers so when I saw a recipe in Chili Pepper Madness for a stuffed pepper casserole I had to try it and it was great. I use more rice and double the cheese. Like any casserole you can modify the recipe using different ground meats or vegetables. It has everything you need for a meal; protein, vegetables and a starch. Although it does go great with a salad.

Ingredients

  1. 1 lbsGround beef
  2. 1 Tbspoil for cooking
  3. 1Onion diced
  4. 1Red bell pepper diced
  5. 1Yellow bell pepper diced
  6. 2Jalapeños diced
  7. 5 Clovesgarlic minced
  8. 14.5 ozcan Fire roasted diced tomatoes
  9. 2 TbspWorcestershire sauce
  10. 1 TbspPaprika
  11. 1 tspdried oregano
  12. 1 tspdried basil
  13. Salt and pepper to taste (I used 1 tsp salt and 1 tsp black pepper)
  14. 1.5 cupsWhite rice cooked
  15. 2 cupsShredded cheese (I used 1/2 Monterey Jack and 1/2 cheddar)
  16. Garnish; red pepper flakes, green onions, or parsley

Cooking Instructions

    Preheat oven to 425°F. In a large oven proof skillet or Dutch oven add oil and heat on medium. Add onions and peppers. Cook until soft.

    Add garlic and cook for 30 seconds. Add ground beef and cook until done while breaking up the meat.

    Add in tomatoes, Worcestershire sauce, paprika, salt, black pepper, oregano, basil, and rice. Mix well.

    Take off heat and mix in 1/2 of the shredded cheese. Distribute the remain cheese to cover the top. Place pan in the oven for 15 minutes.

    Remove pan and let cool down. Plate the casserole and garnish with red pepper flakes, greens onions or parsley. Enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
