Stuffed Pepper Casserole

I love stuffed peppers so when I saw a recipe in Chili Pepper Madness for a stuffed pepper casserole I had to try it and it was great. I use more rice and double the cheese. Like any casserole you can modify the recipe using different ground meats or vegetables. It has everything you need for a meal; protein, vegetables and a starch. Although it does go great with a salad.
Stuffed Pepper Casserole

Cooking Instructions

Preheat oven to 425°F. In a large oven proof skillet or Dutch oven add oil and heat on medium. Add onions and peppers. Cook until soft.

Add garlic and cook for 30 seconds. Add ground beef and cook until done while breaking up the meat.

Add in tomatoes, Worcestershire sauce, paprika, salt, black pepper, oregano, basil, and rice. Mix well.

Take off heat and mix in 1/2 of the shredded cheese. Distribute the remain cheese to cover the top. Place pan in the oven for 15 minutes.

Remove pan and let cool down. Plate the casserole and garnish with red pepper flakes, greens onions or parsley. Enjoy!

This has all the yummy flavors of classic stuffed peppers, but with much less hassle. And if your kids are picky as mine can be sometimes, then this will be a bit more appealing to them than a whole stuffed pepper. Because it uses brown rice, it does take a bit longer to cook, but it's mostly hands off time. You could also use quinoa or long grain white rice, just adjust the cooking time. Christina -

A cousin made this for a holiday get together and I just had to have the recipe. It tastes like stuffed bell peppers but in a casserole instead. I cooked this in my favorite Texas Skillet before adding to baking pans. It is perfect for gatherings, potlucks, and holidays, or an evening meal. I have brought this a few times to gatherings and the pan is always empty by the end of the evening. It's sure to be a hit with guests! I used 2 ½ lbs of meat because I usually just chop a 5 lb roll in half to make 2 separate meals. You can use just 2lbs. This will easily make 2 - 13x9 dishes which is great for large families.
