Made in a Rice Cooker: Tender Beef Shank Curry

I bought beef shank on sale, but I don't have a pressure cooker….!
So I used a rice cooker instead. Just turn on the switch! It's so easy.

Let the rice cooker do all the work!
You can make a beef stew or slow-cooked beef shank easily if you use different seasonings.
You can't cook meat in certain rice cookers, so check the instruction manual.
We use an Induction rice cooker. For 4 servings. Recipe by rie373

Ingredients

4 servings
  1. 500 gramsBeef shank
  2. 2Onions
  3. 2Bay leaf (if you have some)
  4. 1/2a box Storebought curry roux

Cooking Instructions

  1. 1

Chop the beef shank into bite size pieces and place into the bowl of a rice cooker. Add the bay leaf and enough water to cover.

  2. 2

Roughly chop the onions, scatter on top of Step 1 and switch on! (Use the brown rice program if you have to cook for longer).

  3. 3

When it's done, turn off the switch and leave it for 3 hours (to let it cool).

  4. 4

Transfer to a large pot, add curry roux and simmer (Add appropriate amount of water depending on the roux.)

  5. 5

It's done. The beef is so tender and delicious.

  6. 6

The onions will dissolve if you follow this recipe. If you want to keep them intact, add onions in Step 4. Simmer until tender and add to the curry roux.

  7. 7

I only use meat and onions to make this curry for my family. You can use any other vegetables you like in Step 4.

I'm a bit unsure about step three. Do you turn the whole rice cooker off and leave it to cool for 3 hours or do you put it to the 'warm' setting?
