Ingredients

2-4 people
  1. 1 cuprice
  2. 10 tbspwhite wine vinegar
  3. 2carrots shredded (with a peeler)
  4. 1Cucumber shredded (with a peeled)
  5. 1 tspsesame seeds
  6. 4green onions (chopped)
  7. 1 lbground beef
  8. Bulgogi Sauce (see my homemade sauce recipe)
  9. Salt
  10. Pepper
  11. Olive oil

Cooking Instructions

    Cook rice - in a skillet with a drizzle of oil, heat rice for a few minutes, browning a small bit: then add water, bring to boil, put lid on and let simmer for 15-20 min - don’t stir (1 cup rice, 2 cups water)

    Ina bowl, combine half of the vinegar, pinch of salt and shredded cucumber. Let sit to pickle.

    Heat a skillet with a little oil and add shredded carrots. Season with salt and pepper and stir, until tender. Just a few minutes, depending on how tender you like them.

    In another skillet, with a drizzle of oil, heat the whites of the green onions (about half of them), then add the ground beef, salt and pepper and cook until brown. (5-7 minutes) then add the sesame seeds and remaining vinegar to the beef mixture and stir. Then add Bulgogi sauce and let simmer for a few minutes.

    When everything is done, add rice to your plate, and top it with the beef mixture. Add some green onions to the top of that.
    Put carrots and cucumber mixture as sides to your plate and enjoy!

In step 2 it says add half the vinegar to veggies to pickle. So, it’s the remaining vinegar from that.
