Ingredients

30 to 35 minutes
4 servings
  1. 1& 1/2 cups (375ml) regular milk / coconut milk (choice)
  2. 2 cupswater
  3. 2 Tbsphoney
  4. 1/4 tspcardamom powder
  5. Pinchnutmeg powder
  6. Zest of 1 orange, finely grated
  7. 3/4 cup (150 g)fine semolina
  8. 1 Tbspunsalted butter
  9. 2 tsporange blossom water / rose water (choice)
  10. 3/4 cup (105 g)chopped toasted pistachios
  11. Some dried raspberries
  12. 🌻DATE PUREE:
  13. 8medjool dates, seeds removed
  14. 1/4 cup (90 g)runny honey
  15. 1/3 cup (90 g)hulled tahini

Cooking Instructions

30 to 35 minutes

    🌻For the date puree:

    place the dates, 1/3 cup (80ml) boiling water and honey in a blender and whiz to a puree. Stir through the tahini and pinch of sea salt. You may need a little more water to thin out as it thickens up. You are looking for the consistency of smooth nut butters. Set aside at room temperature.

    🌻For Pudding:

    Combine milk, 2 cups (500ml) water, honey, spices and orange zest in a heavy- based medium saucepan over medium- low heat and bring to a simmer. Whisk the semolina into the milk mixture in a slow stream and continue to cook over a low heat, whisking continuously, for 6-8 minutes until thickened and smooth.

    Remove from the heat, stir through the butter and orange blossom water or rose water.

    Divide the pudding in serving bowls / glass and top with the date puree and Scatter over pistachios, raspberries to serve.
