I got the idea from a hotel breakfast I had in Sedona.

I used a 8-slice loaf (you can use thin or thick slices of bread).

If some cheese melts onto the outside of the egg, it creates a nice crispy cheese which is really tasty. For 2 servings. Recipe by Setsubunhijiki

Ingredients

2 servings
  1. 2 sliceSliced bread
  2. 2Eggs
  3. 1approx. 250 grams Chili con carne
  4. 3 tbspGrated mozzarella cheese

Cooking Instructions

    Crack the egg into an oiled frying pan, top the egg white with cheese, and cook. It looks better if you don't top the egg yolk with cheese.

    At the same time, heat the chili con carne in the microwave, and toast the bread on the crispy side.

    Top the toast with chili con carne and then the fried egg. Season with salt and pepper.

    This is the one I had at the hotel. Scrambled eggs on top of tortilla and topped with avocado.
