A slightly healthier version of stuffed peppers with cauliflower rice instead. We found that the consistency of the meat and cauliflower when cooked together blends well texturally. And the cauliflower completely takes on the flavor of the meat and seasonings. Turned out to be a hit!

Ingredients

4-6 people
  1. 6bell peppers (halved)
  2. 1 lbground meat
  3. 1 lbriced cauliflower (frozen)
  4. 1large red onion (chopped)
  5. 4 clovesgarlic (minced)
  6. 1/2 cupsalsa
  7. 4 ozshredded pepper jack cheese
  8. 1 packchili seasoning
  9. 1 packfajita seasoning
  10. 2 teaspoonschipotle chili powder

    Prep veggies.

    Steam bell peppers for 7 mins on medium heat. Set aside to cool.

    In a large pan, heat 2 tbsp of oil on medium-high heat.

    Add riced cauliflower to pan and sauté until moisture has evaporated. Approximately 10 mins.

    Add ground meat to pan and mix with cauliflower. Sauté until partially browned.

    Add garlic, onion, salsa, and seasoning. Continue cooking until meat is browned.

    Remove pan from heat. Set oven to 350° and allow the stuffing mixture to cool while completing the next step.

    Drizzle olive oil onto the steamed peppers and generously salt them.

    Add stuffing to the peppers and top with cheese.

    Bake for 15 mins. Let cool for 5 mins.

    Serve and enjoy!
