Baked Feta Tomato Pasta

Ingredients

  1. 2 ptcherry or grape tomatoes
  2. 1shallot
  3. 6 clovesgarlic
  4. 1/2 cupvirgin olive oil
  5. 1 blockfeta cheese
  6. 10 ozPasta
  7. Fresh basil
  8. Garlic powder
  9. Onion powder
  10. Adobo Goya
  11. Sazon Goya
  12. Cumin
  13. Cayenne powder
  14. Pepper
  15. Shredded cheese

Cooking Instructions

    Preheat oven to 400°. In a large baking dish, combine tomatoes, shallot, garlic, oil.

    Place feta into center of tomato mixture and drizzle with remaining oil. Season with garlic powder, onion powder, adobo, Sazon, cumin, cayenne, pepper.

    Bake for 30 to 40 minutes, until tomatoes are bursting and feta is golden on top.

    Meanwhile, in a large pot of boiling salted water, cook pasta until al dente according to package directions. Reserve ½ cup pasta water before draining.

    To skillet with tomatoes and feta, add cooked pasta, reserved pasta water and stir until combined.

    Add shredded cheese on top of mixture and Garnish with basil. Place back in oven until cheese is golden.
