Last night, I flew back to North Macedonia, my homeland, and I will be staying with my family until Monday. It is so good to be back and eat all my favourite traditional albanian dishes. Today, my mom decided to make a scalded Flija. It's basically lawyes of dough but baked at high temp. And it's so crispy on the outside but soft on the inside.

Ingredients

  1. 1.2 kgflour
  2. 500 mlwater
  3. 1 tbspsalt
  4. 150 mlsunflower oil

Cooking Instructions

    In a pot, add 500 to 600 ml water, 100 ml sunflower oil, and 1 tbsp salt.

    When the water is hard boiling, add the flour gradually and continuously stir.

    Continue with stirring in order so you don't have any pockets of flours.

    Pour the mixture on a floured surface and let it cool down a bit.

    Check if the dough has cooled down a bit and it is not as hot and start kneading it for about 5 minutes.

    Cut it into 10 pieces, knead them, and roll them until you create dough balls.

    Roll each ball into a medium disk and put it in a baking pan and brush it with sunflower oil

    Repeat the same process with the rest of the dough balls and layer them on top of each other.

    Once it's done, press the dough layers until they all open up to a big dough circle on the baking pan and brush it with some oil.

    Cut them into mini cubes and put them to bake for 1 h at 250 °C, after one hour if it's golden brown on top, lower the temperature to 200°C and leave it for another 15 to 30 minutes

    After baking it, serve it with some feta cheese, some tomatoes, or fresh onions.
