Ingredients

  1. 5 slicesbacon, cut into bite size pieces
  2. 1large yellow onion, diced
  3. 3 stalkscelery, diced
  4. 1small bell pepper, diced
  5. 1 cupuncooked long grain rice
  6. 1 (16 oz)can petite diced tomatoes
  7. 3/4 cupchicken bone broth
  8. 1/2 tspcayenne pepper
  9. 1/4 tsphot pepper sauce

Cooking Instructions

    Preheat oven to 350 degrees.

    Cook bacon in medium skillet over medium until crisp. Remove bacon from pan and reserve drippings.

    Add onion, celery, and bell pepper to skillet. Increase heat to medium high and cook until tender, stirring often. Remove skillet from heat.

    Stir in rice, tomatoes, broth, cayenne, and pepper sauce. Season with 1/2 tsp each salt and pepper. Spoon into lightly greased 2 quart baking dish. Cover with foil and bake until rice is tender, 40-45 mins. Do not stir during baking for fluffy on the top and crispy on the bottom authenticity.

    Once out of the oven, remove foil, top with bacon, and enjoy!
