A quick recipe I came up with when trying to satisfy my craving for this traditionally non vegan soup!
Cooking Instructions

In 2 separate pots, bring water to boil.

Cube carrots and potatoes.

In one pot, add the carrots and potatoes. In the other pot, place a mesh strainer in that hangs over pot edges and above water, and place broccoli in strainer to steam.

Cover both pots and cook for 10-15 minutes until potatoes and carrots are soft.

Remove potatoes and carrots from heat and place in blender. Add a 2:1 ratio of dairy free milk to vegetable stock (ex. 1/2 cup milk + 1/4 cup stock) until liquid almost covers veggies. The exact ratio will depend on how big or small your potatoes are.

Add nutritional yeast, lemon, salt, pepper, and remaining spices to blender.

Blend on high speed for a minute until soup runs smooth.

Pour soup into large serving bowl or straight into chowing vessels and add steamed broccoli. Makes 2 just soup servings, or 4 side servings.

This soup has little to it and doesn't take a ton of work, but has really well-developed flavor and is as close as you can get to a real classic soup. I used fresh broccoli for this, but you can use frozen as well. I wouldn't cook it quite as long as the potatoes/onions, though. Frozen tends to take less time. hands.matt -

My daughter made this soup for us one day and it was a big hit. She found this recipe on-line somewhere. It is a thick soup, but you can add more chicken broth and milk if you prefer a thinner consistency. I omit the salt as there is enough in the chicken broth and the cheese. If you don't have swiss cheese, it is also good with just the cheddar cheese!ingridbagnariol

This recipe is delicious and completely customizable to your taste. For example, you can forego cauliflower or add more celery if you like. You can even use a different cheese (e.g., pepper jack).You can also purée the soup once it cools down, or not.
