In a pan sauté hog jowls till fat is rendered.

Add kale, seasonings, and onions stir well, and sauté for 15 minutes till moisture is absorbed.

Add peanut oil and make a pocket/ crater in the center adding the sausage. Cover and cook till sausage is done.

Mix well add seasonings to taste, if necessary.a
