Portuguese Rice

Every summer, my parents would take all of us up to Cape Cod for a few weeks. I love the food up there. Between all of the different fresh fish and the great Portuguese dishes, I am in heaven. One of my favorite places to eat is John's Foot Long in Provincetown.

I am allergic to shellfish so I have never had it, but I heard that their lobster roll is one of the best. Judging by all of their other dishes, I would not doubt that. My favorite dish of theirs is their Portuguese Rice. I have been trying to find a similar recipe to theirs, but it is impossible. Along the way, I have combined a few recipes that I have found and came up with one that I like a lot.

It is nothing similar to John's in taste, but it is still very, very good. Definitely worth the try. #mycookbook

Portuguese Rice

Ingredients

4-6 servings
  1. 1 lbLinguica, or more if you want, diced to small pieces
  2. 1Medium Onion, diced
  3. 2 clovesGarlic, diced
  4. to tasteGround black pepper
  5. 1 tspPaprika
  6. 2-3Bay Leaves
  7. 1 canNo Salt Added Diced Tomatoes, 14.5oz
  8. 1 tbspFresh or Dried Parsley
  9. 2 1/4 CupsWater
  10. 1 1/2 CupsJasmine Rice

Cooking Instructions

    Take the diced Linguica and cook in a frying pan over medium heat. Cook until slightly browned. Remove from the pan to let cool.

    Coat the bottom of a medium pot with olive oil. Using a medium high heat, heat the oil for about 2 minutes.

    Add the onions, garlic, black pepper, paprika, and bay leaves. Saute the onion mix until the onions are somewhat soft and translucent.

    Add the tomatoes to the onion mix and cook together for about 5 minutes. Then add the parsley to the pot, cook for another minute or two.

    Then add the water to the pot and bring to a boil. Once everything is boiling, add the rice. Remove the bay leaves.

    Stir the rice to mix everything together, then cover the pot, and reduce the heat to low. Cook for 15 minutes.

    Add the linguica into the pot, stir to mix together, cover again, and cook another 5 minutes. If you like the crispy rice on the bottom, then cook 10-15 minutes instead.

    When done, stir once and let sit for about 5 minutes. That is if you can wait that long. If not and you do not mind hot rice, then dig in!

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!

Hello from a White Plains woman in LA.We so enjoyed your linguica rice and I will be trying your baked french toast at Christmas if the family can be together, god willing. Looks so amazing. I have a question: when I take the linguica out of the pan, can I use the pan to cook the onions and garlic and rice, too? I can use only one pot and then I can get all the juices from the linguica to add to the rice and other ingredients. And reduce the amount of oil. Just a thought. Keep up the good work!
