Cut the chicken breast into bite-sized pieces and place in a bowl. Massage in the sake, sugar, salt, and mayonnaise. Cut the green onion into 1-1.2 inch pieces.

Add the yuzu pepper and soy sauce to the bowl and mix. Let it sit for a while.

Heat a frying pan and add vegetable oil. Coat both sides of the chicken breast from step 3 with potato starch and place in the pan.

With this amount, you might not be able to cook it all in one go, so divide the vegetable oil according to the number of times you cook.

Add the green onion from step 1 to the empty space in the frying pan, cover, and cook over medium heat.

When the color of the chicken breast changes, flip the chicken and green onion.

Cover again and cook for a while. Once cooked through, uncover and increase the heat to make the surface crispy.
