Spinach Pie

This dish is perfect for breakfast, lunch or dinner.

I love spinach. The first time I made this because I was given a bunch of free spinach from a grocery store tossing it out. The amount of flour may be adjusted next time I make it. It may need a little more. I may toss in a few mushrooms next time. If 2 pies are too many, you can freeze one for another time. The spices are optional. I'm Cajun so everything must have some spice!

Ingredients

2 Pies
  1. 2deep dish pie crust
  2. 15 OzRicotta cheese
  3. 3/4 CupParmesan and cheese
  4. 1 1/2 cupshredded Mozzarella cheese (extra for topping)
  5. 3whisked eggs
  6. 1/2 cupheavy cream
  7. 3 tbsflour
  8. 1 tbscoconut oil
  9. 10 ozpackage Spinach chopped
  10. 2 tbscoconut oil
  11. 1 lbItalian sausage (skinless)
  12. 1/2 cupseasoning blend (onions, peppers, celery)
  13. 1 1/2 tbsMinced garlic
  14. 2 tspgarlic powder
  15. 2 tspcreole seasoning
  16. Dashcayenne (optional for added spice)

Steps

    Preheat oven to 375

  2. 2

    Put oil in skillet to brown sausage. Add creole seasoning if desired. Make sure to get it to a fine mince. After it's fairly brown add seasoning blend and garlic. Saute till done.

    In a large mixing bowl mix cheeses well. Then add eggs, cream, and other spices and flour. Mix well.

    Add meat, veggies and spinach. Mix well. If your spinach is frozen or wet squeeze out access moisture first.

    Place mixture in deep dish pie crusts.

  6. 6

    Bake at 375 for 30 mins. Remove from oven and top with Mozzarella. Bake an additional 15 mins. Carefully Broil to brown the cheese if desired. Careful not to over brown crust. Allow to cool a little before serving. Enjoy!

I love cooking in my Texas Size Skillet and iron Pots! I love fermentation, sourdough bread, and other fun kitchen experememts. I have an old fashioned style of cooking that comes from shadowing my Grandma in the kitchen in the kitchen growing up, it was one of my favorite pastimes. Favorite seasonings are Tony Chachere's Cajun seasoning and Goya Total The Perfect Seasoning, I put them in almost every dish! I always cook with lots of love and a little magick! ✨
