Ingredients

1 serving
  • 1/2chicken breast, pound out evenly
  • 2 cupsbuttermilk, marinating
  • 2beaten eggs & 1/4 cup buttermilk; whisk together
  • 1 cupall-purpose flour
  • 2 tsp.white pepper
  • 1 tsp.thyme
  • 1 tsp.oregano
  • 1 tsp.sweet paperika
  • 11/2 tsp.garlic salt
  • 1 tsp.celery salt
  • 1 tsp.black pepper
  • 1 tsp.basil
  • 1 tsp.dried mustard
  • 11/2 tsp.ginger
  • sprinkle w/ accent or cajun seasoning
  • 1lettuce leaf
  • 1 slicetomato
  • 1 Tbsp.Hellmanns real mayonnaise
  • 1english muffin or bun of choice
  • 2 cupspeanut oil or vegetable oil

Steps

    Pound out chicken evenly; about a 1/4 inch thickness.

  2. 2

    Marinate chicken in buttermilk for 2 to 4 hrs. Discard leftover marinate.

  3. 3

    Beat together eggs and 1/4 cup of buttermilk; set aside.

  4. 4

    Sift together flour and seasonings into a large bowl; set aside.

  5. 5

    Heat oil in 12" skillet over medium-high heat.

  6. 6

    Take chicken dip it into the egg mixture, then coat it in the flour-seasoning mixture. Set aside for about 2 to 3 minutes to allow mixture to adhere to the chicken.

  7. 7

    Carefully lay chicken into the heated oil and fry until golden brown; about 4 minutes per side.

  8. 8

    Remove, set aside on paper towel.

  9. 9

    Toast english muffin or bun of choice.

  10. 10

    Spread both halves with mayonnaise, then layer chicken on bottom half first, then top with lettuce leaf and tomato; secure the top half of muffin or bun. Enjoy! Ya'll...
