Had a Couple Pork Tenderloins in the Freezer from when they were on sale. Decided, to make a one pan roast with rice.

Ingredients

1 hour 45 minutes
8-12 people
  1. 2pork tenderloins
  2. 1 1/4 cupsMinute Rice
  3. 1/4a diced Green Pepper
  4. 1diced onion
  5. 3diced Serrano peppers, seeds and all
  6. 1/2small can tomato sauce (4ozs.)
  7. 1 1/3 cupsEnough Chicken stock to equal, with the tomato sauce,
  8. 1/2 tspground cumin
  9. 1 tspchili powder
  10. 1/4 tspgarlic powder
  11. Salt and Pepper
  12. Soul Food Seasoning to coat the tenderloins

Cooking Instructions

    Add the diced veg to a suitable roasting pan. Combine and measure out 1 1/3 cups total of the tomato sauce and Chicken stock mixed in a measuring cup. Add the spices and seasoning and stir in the cup to combine. Pour in the pan with veg and rice and stir thoroughly.

    Layer the Pork Tenderloins atop, and season them thoroughly with the Soul Food Seasoning.

    Bake at 375 for an hour. Turn off heat, cover the pan with lid, and let sit in the oven for 20 mins.

    Let rest covered.
