Cheese stuffed Tteok Kalbi (떡갈비)

Tteok Kalbi is a dish that was inspired by the Korean BBQ short ribs (Kalbi)
instead of using the traditional cut of Korean short ribs, Tteok Kalbi is made with ground beef that is shaped into patty or ball shapes and pan fried!
This is one of the more convenient meals we make in our home.
it’s perfect for meal preparation and my mom loves them so much that she requests them very frequently for her lunch box to take to work.
They pair perfectly with white rice and whatever kind of vegetables you desire.
Tteok Kalbi is absolutely delicious just on its own but sometimes we like to stuff some cheese into the beef patty’s, and coat them in our favorite brand of bottled bulgogi/ teriyaki sauce!

Steps
- 1
First add your ground beef into a mixing bowl. Then slice the green onions thinly and add them into the bowl, and grate in the 5 cloves of garlic. (I use ground beef that has an 80% beef and 20% fat ratio) lean ground beef isn’t as juicy
- 2
Next add all the seasonings listed above and combine all the ingredients together. (the cornstarch acts as a binder to the meat does not crumble and fall apart during cooking)
- 3
Now shape the beef into patty shapes and Wrap the beef around a piece of cheese
- 4
Transfer the meat patties into an oiled pan and fry each side for about 4-5 minutes
- 5
Next add some of your favorite bottled bulgogi or teriyaki sauce into to coat all the meat pattys (I used this Japanese bbq sauce) then serve with rice and vegetables!
