You will love this yogurt chicken roast! They're juicy, tangy, and full of taste, and they require very little effort on your part and can be prepared in advance. Prep is made easy with a simple, delicious seasoning blend.
The tang of the yogurt mixed with the acidity of the lemon and the freshly ground aromatic spices combine so beautifully with the butter for a fantastic iftar.
Simply place it in the oven or on the grill! And for a final touch, fry it in the butter for a glossy finish. I encourage you to make extra because you will want seconds.
If you do not prefer to roast it in the oven, cook it in a grill pan till tender.

Ingredients

  1. 4chicken quarters
  2. 1 tbsp.peppercorns
  3. 1 tbsp.cumin seeds
  4. 1 tbsp.coriander seeds
  5. 3cloves
  6. 1 cupyogurt, whisked
  7. 2 tbsp.lemon juice
  8. To taste, salt
  9. 2 tbsp.butter

Cooking Instructions

    Dry roast the whole spices till fragrant. Remove and cool.

    Grind the spices into a smooth powder.

  3. 3

    Score the chicken and add to a bowl.

    Add yogurt, lemon juice, salt and ground spice powder. Mix well. Rest for 20 minutes.

    Preheat oven 425F/218.

    Line a roasting pan with parchment paper and place the chicken.

    Roast for 20 minutes. Turn the quarters cut side down using tongs and continue baking until chicken is no longer pink at the bone and the juices run clear, about 20 more minutes.

    Remove and cool completely. Cut the chicken into pieces.

    Melt butter in a pan and fry the chicken till nice and golden.

    Remove and serve.
