Chop all vegetables, sautee onions,celery and carrots for 5 minutes in 1 tablespoon EVOO Add cans of diced tomatoes

Stir in chicken broth, water and boullion. Bring to boil the lower heat.

Add all vegetables, rind, salt and pepper. Simmer for one hour.

Add a ladle full of pasta to bowl + soup. Serve with some grated Parmesan cheese on top
