Kutch Khari Bhaat is a traditional dish. In Kutch, Khari Bhaat is specially prepared for any small or big occasion and also for occasions like weddings. The specialty of this Khari Bhaat is that it does not have any vegetables like Pulao and it uses more spices as the main masala. And it is not cooked in a cooker but in a clay pot or kadai and boiled. We have learned to make and eat this Khari Bhaat when we were in Kutch for my daughter's job. And my daughter likes green peas very much, so I have added them,it is optional.

Ingredients

  1. 200 gmrice
  2. 2Potato
  3. 2 Onion
  4. 100 gm green peas
  5. 4/5 cinnamon,
  6. 4 /5 cloves
  7. 4 /5 cardamom
  8. 4 /5 star flower
  9. 3/4 coriander leaves
  10. 4/5 dried red chilies
  11. 8/10 sweet lime leaves
  12. 2 tablespoon garam masala
  13. 2 tablespoon ghee
  14. 5 table spoon oil
  15. 2 bowl water
  16. Salt to taste

    To make salty rice, it is better to use basmati rice, otherwise any type of rice will do. Wash a bowl of rice well and soak it for an hour. Now we add the spices. Chop cinnamon, cloves, cardamom, red chili, coriander, star anise, neem, cumin, 2 potatoes, 2 onions in a medium bowl. Now put oil in a pan, take a little more oil,

    Put 4 large spoons of oil in the pan. Now add all the spices in it and fry until they turn pink. After that, add potatoes and onions in it, add red chili powder, turmeric powder and salt and stir well. All the spices will have a nice aroma, then add the soaked rice in it, stir well, add 2 bowls of water and let the rice boil. Don't boil the rice too long, as it will be loose, now this rice will rise for 10/15 minutes and will become salty rice,

    So add 2 teaspoons of garam masala and 2 teaspoons of ghee for flavor, stir well and serve hot, if you taste this salty rice once, you will remember its taste, that the taste of Kutch is different.
