Beef and Bean Burrito

Ingredients

  1. 1Medium onion, diced
  2. 2 poundsGround beef
  3. 1 1/2 teaspoonsCumin
  4. 1 teaspoonChili powder
  5. 1 teaspoonOregano
  6. 1 teaspoonGarlic powder
  7. 1 teaspoonOnion powder
  8. 1 teaspoonSalt
  9. 21 ouncesRed enchilada sauce
  10. 1small can Chipotle sauce
  11. 10 ouncesOriginal Rotel
  12. 1 canRefried beans
  13. 3 cupsCheddar cheese, shredded
  14. 8-10Burrito size flour tortillas

Cooking Instructions

30 minutes

    Preheat oven to 250 degrees Fahrenheit.In a large skillet, brown ground beef and onion. Drain excess grease. Return back to pan.

    Add to meat mixture cumin,chili powder,oregano,garlic powder,onion powder and salt. Stir to combine add enchilada sauce and 1/2 can chipotle sauce. Simmer 10-15 minutes until mixture is not runny.

    In a medium saucepan add refried beans, can of Rotel, and 1 cup cheddar cheese, stir until cheeses is melted. Remove from heat.

    Warm tortilla shell in microwave. Spread tortilla with refried beans and meat mixture. Place in large baking dish. Add cheese to top. Cover with foil and heat in oven until cheese is melted. Add lettuce and sour cream if desired. Serve.
