Somali rice will forever be a staple in my home

Ingredients

  1. 2 cupsrice, washed and drained
  2. 1/2yellow onion, chopped
  3. 3 1/2-4 cupshot water
  4. 1/2 tbspxawaash
  5. 2maagi cubes
  6. 3cloves
  7. 2bay leaves
  8. 1cinnamon stick
  9. 6cardamom pods
  10. 1/4 cupcilantro and 4 garlic cloves blended together
  11. Optional: red and orange food color

Cooking Instructions

    Add olive oil to pot and once hot add in onion and blended garlic and cilantro

  2. 2

    Add bay leaves, cinnamon stick, cardamom pods, cloves, and xawaash to pot and mix together

  3. 3

    Add washed and drained rice to pot and mix with seasoning

  4. 4

    Mix together hot water and Maagi cubes and add to rice

  5. 5

    Once rice starts to boil cover and turn heat to low and cook for 15 minutes

  6. 6

    Once rice is cooked, add in red food coloring and cover for 2-3 minutes

  7. 7

    Fluff up rice and serve with chicken
