As someone who grew up in Texas, it bogs my mind that plenty of people do not eat breakfast tacos. That ends today.
Cooking Instructions

Start 2 strips of bacon (halved in image) on a cold pan on medium low heat.

While bacon is frying, prepare eggs by scrambling and adding a pinch of salt for texture.

Prepare poblano peppers by deseeding and dicing.

Once bacon is cooked to preferred doneness, use clean food shears to slice into smaller pieces.

Add prepared poblano peppers to the pan with bacon. Mix thoroughly and fry lightly until the peppers are fragrant and bacon is to your preferred doneness.

Turn heat down to low and add egg directly into hot pan. Lighly stir around until scrambled eggs are done. Remove from heat.

Lightly toast up tortillas.

Combine, serve hot, and enjoy with your favorite hot sauce. :)
