Ingredients

1 hour (excluding marination)
5–6 people
  • Chicken Marinade (Flavor Base):
  • 1 kgchicken (bone-in recommended)
  • 1 cup thick yogurt
  • 2 tbsp ginger-garlic paste
  • 2–3 green chilies (slit)
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1½ tsp salt
  • 1 tsp garam masala
  • ½ cup fried onions
  • 2 tbsp lemon juice
  • Fresh mint leaves (handful)
  • Fresh coriander leaves (handful)
  • Rice Preparation:
  • 3 cups basmati rice (soaked 30 minutes)
  • 2 bay leaves
  • 4 cloves
  • 4 green cardamoms
  • 1 small cinnamon stick
  • 1 tsp salt
  • For Aroma & Layering:
  • ¼ tsp saffron soaked in 3 tbsp warm milk
  • 2 tbsp ghee
  • Extra fried onions (crispy)
  • 1 tsp rose water (optional but restaurant-style)

Steps

1 hour (excluding marination)
  1. 1

    Marination (Most Important Step)
    Mix chicken with yogurt, spices, herbs, fried onions, and lemon juice.
    Cover and marinate for at least 2 hours (overnight gives best restaurant flavor).

    Cook Rice (Keep 70% Done)
    Boil water with whole spices and salt.
    Add soaked rice and cook until 70% done (slightly firm).
    Drain immediately to avoid overcooking.

    Semi-Cook Chicken Base
    Add marinated chicken to a heavy-bottom pot.
    Cook on medium flame for 10–15 minutes until slightly tender and juicy gravy forms.

    Fried onions, mint, coriander

    Saffron milk drizzle
    Ghee + rose water
