Fry the onions
Heat oil in a heavy-bottom pot.
Add sliced onions and fry until golden brown.
Remove half of the fried onions and keep aside for layering. - 2
Cook the chicken masala
Add ginger-garlic paste to the remaining onions and sauté for 1 minute.
Add chicken and cook for 5–7 minutes until color changes.
Add:
tomatoes
yogurt
red chili powder
turmeric
coriander powder
cumin powder
salt
black pepper
Mix well and cook until tomatoes soften and oil begins to separate. - 3
Add potatoes
Add potatoes and 1 cup water.
Cover and cook until chicken is tender and potatoes are almost cooked.
Add lemon juice, green chilies, mint, coriander, and garam masala.
The gravy should be thick, rich, and flavorful. - 4
Cook the rice (70% done)
Boil plenty of water.
Add whole spices and salt.
Add soaked basmati rice and cook until 70% done.
Drain immediately. - 5
Add aroma finish
Pour saffron milk evenly
Drizzle ghee on top
Add rose water (optional for royal aroma) - 6
Layer the biryani
Over the chicken masala, spread half of the rice.
Sprinkle:
fried onions
mint leaves
coriander leaves
green chilies
Add remaining rice.
Top with saffron milk and ghee. - 7
Dum cooking
Cover tightly with a lid or seal with dough.
Cook on very low flame for 25–30 minutes.
Place a tawa under the pot to prevent burning. - 8
Rest & serve
Turn off the heat and let the biryani rest for 10 minutes.
Gently fluff from the sides without breaking the rice.
Serve hot.
