Loaded Street Corn Jalapeno Dip

This creamy street corn jalapeño dip was inspired by my love for elote flavors, sweet charred corn, smoky spices, creamy cheese, bacon, and just the right little kick. It’s special because it has that loaded, comforting flavor without being overly spicy, and the fiesta ranch seasoning gives it my own twist. My favorite way to eat it is warm and bubbly with tortilla chips, but it would also be amazing as a topping for tacos, grilled chicken, or nachos.
Loaded Street Corn Jalapeno Dip
This creamy street corn jalapeño dip was inspired by my love for elote flavors, sweet charred corn, smoky spices, creamy cheese, bacon, and just the right little kick. It’s special because it has that loaded, comforting flavor without being overly spicy, and the fiesta ranch seasoning gives it my own twist. My favorite way to eat it is warm and bubbly with tortilla chips, but it would also be amazing as a topping for tacos, grilled chicken, or nachos.

Cook 5 slices of bacon until crispy.
Remove the bacon and place it on a paper towel-lined plate.
Crumble the bacon once it's cool enough to handle.
Drain most of the bacon grease but leave about 1 teaspoon in the skillet. - 2
Char the corn (don’t skip)
Heat butter + oil in skillet
Add corn + cook 5–7 min until slightly charred
This gives you that true street corn flavor - 3
Add jalapeños + garlic & cook 1–2 min
Stir in:
Fiesta ranch seasoning
Chili powder, paprika, cumin, cayenneyou’ll start smelling that creamy ranch + smoky combo already

Make it creamy & rich
Lower heat
Add cream cheese, melt it
Stir in sour cream + mayo
Mix until smooth - 5
Stir in:
Pepper jack
cotija
Most of the bacon
Add lime juice
Taste & adjust seasoning as needed/to own liking. - 6
Transfer to baking dish
Top with:
Extra cheese
Remaining bacon
Light sprinkle Fiesta ranch
Bake at 375°F for 10–15 min
Broil 1–2 min until golden + bubbly
Tips
Heat Control (Dial It In)
Keep it perfect (your goal):
1 jalapeño + ¼ tsp cayenne
Want a little more kick:
2 jalapeños or leave a few seeds
Pro-Level Touch (Highly Recommend)
Right before serving:
Drizzle a tiny bit of melted butter + lime juice over the top
Sprinkle fresh cilantro + cotija
That’s what gives it that “restaurant wow factor”
What This Pairs BEST With
Air fryer pita chips (with garlic + paprika
Tortilla chips)
Or honestly… eat it straight with a spoon
