Butternut Squash with Apples and Spinach

dribble olive oil onto large non-stick skillet, place over medium heat

wash & skin butternut squash, slice in half, and remove seeds and guts

dice butternut squash into small squares, toss into skillet and stir to coat in olive oil, cover with lid and let it steam a bit while you dice up other ingredients

wash and spin dry spinach leaves, remove stems

dice 1/2 of a medium red onion, add to skillet and stir, recover

wash and dice up 1 red apple, add to skillet, stir, recover

keep covered until butternut squash is soft, stir occasionally...

when the butternut squash is soft, add oregano and spinach, stir, recover, stir occasionally...

it will be done when the spinach is soft, remove from heat.

top with feta cheese
