Mocha Bread Pudding With Caramel Topping

Ingredients

  1. 3eggs
  2. 2 cuphalf and half
  3. 1 cupmilk
  4. 1/2 cupsugar
  5. 1/2 cupbutter, melted
  6. 1 tspground cinnamon
  7. 1/2 cupflaked coconut
  8. 1 cupchopped nuts
  9. 1 cupchopped dates
  10. 10 ozday old Italian or French bread, torn into pieces (about 8 cups)
  11. 1 cupcaramel ice cream topping, heated
  12. 1/2 cupcoffee flavored liqueur or cold brewed coffee

Cooking Instructions

    Heat oven to 325°F.

    Spray 13 X 9 inch (3quart) glass baking dish with cooking spray.

    In pan, gently mix bread pieces, dates, nuts, coconut and cinnamon.

    In a large bowl, mix butter, sugar and liqueur.

  5. 5

    Beat in eggs with a spoon until well blended.

  6. 6

    Stir in half and half and milk.

  7. 7

    Pour over bread mixture in pan; toss to mix well.

  8. 8

    Let stand 10 to 15 minutes or until most of the liquid has been absorbed.

    Bake 1 hour or until set.

  10. 10

    Serve warm bread pudding with warm caramel topping.

    Store in refrigerator.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old.
