Ingredients

  1. 4 poundsapples, peeled, cored and diced, a combination of tart
  2. and sweet works best
  3. 2takespoons fresh lemon juice
  4. 4rtabkespoins butter
  5. 2/3 cupgranulated sugar
  6. 2 tablespoonsall purpose flour
  7. 1 teaspoonground cinnamon
  8. 1/4 teaspoonsalt
  9. Vegetable oil for frying
  10. 1egg beaten with 1 tablespoon water (egg wash)
  11. 12-15egg roll wrapper
  12. Cinnamon sugar for sprinkling
  13. Vanilla ice cream and or whipped cream for serving
  14. Caramel sauce for drizzling, I used my simple caramel sauce in
  15. my orofile

Cooking Instructions

  1. 1

    Place apples, lemon juice and sugar in a bowl and mix

  2. 2

    Heat butter in a large skillet and add apples with all juices from the bowl.cook stirring often until apples are tender but hold their shape

  3. 3

    Add cinnamon.,flour and salt, stir just to combined and scrape into a bowl and cool compleatly. Can be made up to 2 days in advance, keep refrigerated

    Make eggrplls

  5. 5

    Lay egg roll wrappers flat. Brush edges with egg wash

  6. 6

    Place some apple filling on one end

  7. 7

    Fold over sides

  8. 8

    Roll up to compleatly enclose fillimg

  9. 9

    Heat oil to cover 2 eggrolls m cook 2 at a time to 350. A Dutch oven works well. Fry in pairs until golden.

    Drain on racks but sprinkle with cinnamon sugar while hot

  11. 11

    Serve with ice cream while hot. Drizzle with caramel sauce

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
