smoke a 13 pound Turkey for about 4 hours on the green egg or smoker between 250 and 300°F.

during this time slice red onion thin but keep the pieces whole as rings.

chop 1 bunch of green onion

hard boil eggs, chill, and then peels and slice thin
- 5
i use 1 bag of peas in the steamer bag for ease. cook and chill for 5 minutes before adding to mixing bowl

once the Turkey is finished smoking carve and pick white and dark meat mixing some of the crusted skin as well.

once you have all the Turkey picked and chopped into small pieces add into large mixing bowl.

add all the other ingredients together with real Mayo until everything is mix well and coated evenly.

you can choose to add salt and pepper at this time or just add at serving time

after everything is mixed together you can serve on whatever you feel like eating...you can't go wrong!
