Made these for the first time for book (aka wine) club last night and they were a HUGE hit!! So easy to assemble AND the variations are ENDLESS!! You can fill with Greek, Caesar or Chopped Blue Cheese and Bacon salad.....ANY type of salad. You can add pepperoni, provolone or olives to this Italian version. Enjoy and your welcome!!(Pinterest)

Ingredients

  1. 1box of jumbo shells cooked al dente and drained
  2. 2heads of romaine chopped small
  3. 1large tomato seeded and diced small
  4. 1cucumber peeled,seeded and diced
  5. 1/2 lbham,diced (I just had my deli give me a 1/2 chunk)
  6. 1/2 cupgood quality parmesan, either shredded or shaved
  7. 1/3 cuproasted red peppers, drained well and chopped
  8. 1/4 cuppepperocini peppers, drained and chopped
  9. 2/3 cupItalian dressing of choice(I used Kraft Tuscan House Italian)
  10. 1 1/2 tbspItalian seasoning

Cooking Instructions

  1. 1

Place shells on a large serving plate. There will be 35 shells to a box usually and some always break so this recipe fills 30 shells.

  2. 2

Combine all remaining ingredients. Mix very well. Its a small amount of dressing for a lot of ingredients but you just want it to lightly coat not saturate.

  3. 3

Begin filling shells with salad! That's it!! Drizzle with a scant amount of dressing if desired. Place on a table and watch them disappear!!
