Pork & Gnocchi Pork & Gnocchi
So, I saw some Swiss chard in the store. I honestly don’t buy it that often but I remembered seeing some kind of creamy Swiss chard before and wanted to take a stab at it. I was not trying to make pasta, didn’t have any boxed pasta and I didn’t feel like rice. I had a package of gnocchi and it was on like popcorn. Karl -

Gnocchi (from scratch!) Gnocchi (from scratch!)
Gnocchi (pronounced: N’YAW-kee). The...noodle(?) that inspires visions of Italy. Did you know, that in the city of Verona (from where my recipes and my mother originate) there is actually a gnocchi festival? There is a rich history behind this pasta that would surprise you! A story of survival that we as (most) 21st century people couldn't possibly comprehend. But keep in mind that there wasn't always readily available supplies at your local grocer whenever you desired. Check here http://www.veronissima.com/sito_inglese/html/events_carnival_ing.html to learn more.In summary, during a great famine, there was a person who essentially donated his wealth to keep the people of Verona alive with potatoes and flour. Crazy, right? But now this delicious and versatile pasta can be utilized to create a myriad of dishes that not only can keep the peasants alive, but even entertain the pallets of the most auspicious and sophisticated and have them begging for more!I'll post my favorite sauces and link them soon! Stay tuned! Buon appetito, amici miei!Steve D.
