Ingredients

  1. 1/4 C.Olive oil
  2. 4boneless chicken breasts, lightly salted & peppered
  3. 1/2 C.thinly sliced onions
  4. 2large cloves garlic, chopped
  5. Small package mushrooms, sliced
  6. 1/4 C.White wine
  7. 1/2 C.Chicken broth
  8. 1 Tbsp.Dijon mustard
  9. 2 Tbsp.Balsamic vinegar
  10. Rosemary & Tarragon, fresh or dried
  11. 15 oz.can diced tomatoes, drained

Cooking Instructions

    Brown the chicken on both sides in the olive oil in a large skillet. Remove from pan & set aside. Add the onions & garlic to skills & cook over low heat for 5 minutes. Add the mushrooms & cook for 5 minutes. Add the wine and let simmer for 10 minutes.

    Combine the chicken broth, mustard & vinegar & pour over mushrooms. Add the tomatoes. Add Rosemary & Tarragon.Stir to combine. Add the chicken back to the skillet & let simmer for 20 minutes until chicken is cooked through.

    Serve with spaghetti squash "noodles" or cauliflower rice. Serves 4.
