This one was an accident. I pulled turkey out to thaw, and once dinner time came around the original plan didn't sound good to either of us. We had all the stuff for enchiladas, and decided to try it with turkey! It feels less heavy with turkey. But don't season it too much!

Ingredients

  1. 1 lbground turkey
  2. 1 canenchilada sauce
  3. 1 smallonion, chopped
  4. 1 cupshredded cheese
  5. 1 cupcooked rice
  6. 4flour tortillas (12in)

Cooking Instructions

    Preheat oven to 375°F.

    Cook turkey and onions in a sauce pan.

  3. 3

    Add cooked rice to meat.

  4. 4

    Add about a cup of enchilada sauce to the meat, and a half cup of cheese.

  5. 5

    Put the meat mixture on your tortillas and roll them up.

  6. 6

    Put a half cup of enchilada sauce into square cake pan, set enchiladas flap down in the sauce.

    Top with remaining cheese and pop in the oven until warm and bubbly.
