Ingredients

  1. 1 lbGround beef
  2. 1 can10 Oz Old El Paso Mild Enchilada Sauce
  3. 116 Oz Jar Black Bean Roasted Corn Salsa
  4. 8Old El Paso Flour Tortillas For Burritos (8inch)
  5. 2 cupShredded Mexican Four-Cheese Blend (8oz)

Cooking Instructions

    Preheat oven to 350* F. Spray 13x9-inch (3-quart) baking dish with cooking spray

    In a large skillet brown ground beef till no longer pink

  3. 3

    Drain ground beef and transfer to a large bowl

  4. 4

    Add 1/4 cup of the enchilada sauce

  5. 5

    All of the salsa

  6. 6

    And 1 cup of cheese

  7. 7

    Stir to combine

  8. 8

    Lay a tortilla on a plate

  9. 9

    Scoop a generous amount of the mixture down the middle of the tortilla. Roll the tortilla tightly.

    Place in the baking dish seam side down

    Top with remaining enchilada sauce

  12. 12

    Top with remaining cheese

    Spray a piece of foil large enough to cover dish with cooking spray and cover dish cooking spray side down.

    Bake 45 minutes or until hot and bubbly. Plate and enjoy!

I've never made enchiladas before and this recipe was so good. I love onions so I added onions with the ground beef.
