Ingredients

  1. 3fresh shiitake mushrooms
  2. 1 cupsliced baby portobello mushrooms
  3. 1/2onion
  4. 1/2carrot
  5. 1 tbspchopped ginger
  6. 1 clovegarlic
  7. 1 cupchicken stock
  8. 2 cupbeef stock
  9. 3 cupwater
  10. Garnish
  11. 1mushrooms
  12. 1green onion

Cooking Instructions

  1. 1

    Slice the mushrooms, onion, carrot, and chop the ginger and garlic.

  2. 2

    Put everything in a soup pot and cover it with the stock and water.

  3. 3

    Cook over low heat for about 45 minutes to an hour.

  4. 4

    Strain out the vegetables, garlic, and ginger.

  5. 5

    Serve the clear broth in soup bowls with finely sliced green onions and mushrooms on top.
