Ingredients

4 servings
  1. eggplant
  2. 1 largeeggplant/aubergine
  3. 2/3 cupbutter, or ghee
  4. 1 tspturmeric
  5. 1 tspgranulated garlic powder
  6. 1/3 tspsalt
  7. 1/2 tspground black pepper

Steps

  1. 1

    Peel and slice the eggplant like you would for french fries

    Heat butter, or ghee. Add eggplant and spices

    Fry till eggplant is done and caramelized. Set to paper towel to absorb excessive oils. Fry in batches repeat till done.
