Ingredients

  1. salsa
  2. 2green jalapeño peppers ( depend how spicy you like)
  3. 8tomatillos
  4. 1garlic clove
  5. 1/4small onion
  6. 1cilantro
  7. 1 tspchicken bouillon (I used mexican brand Knorr)
  8. enchilada
  9. 1shredded chicken breast
  10. 6- 8 corn tortillas
  11. swiss cheese or mozzarella
  12. sour cream

Cooking Instructions

    In a small pan bring to boil the tomatillos and jalapeño peppers.

    When they are soft blend it together with the onion, garlic, little bit of cilantro and the chicken bouillon.

    Heat a 1 tbsp of oil and put the tortillas on at a time until soft (not too crunchy). Put the chicken in the middle of the tortillas.

    Pour the salsa on top, swiss cheese and microwave until the cheese melts about 1 min. Serve with sour cream and onion if desired.
