Ingredients

  1. 16iceberg lettuce leaves
  2. 400 gramscooked chicken, chopped
  3. 4spring onion, trimmed and sliced
  4. 2carrot, cut into matchsticks
  5. 1yellow pepper, sliced thinly
  6. 1red pepper, sliced thinly

Cooking Instructions

    Place 2 lettuce leaves, overlapping with the stalk ends towards you

  2. 2

    Take a quarter of the chicken, onion, carrot and peppers and place in a line along the bottom edge, the stalk ends of the lettuce leaves

  3. 3

    Start to roll the bottom edge up, tucking in the sides as you go to hold the filling in

  4. 4

    Repeat with the other 3 portions of lettuce leaves and filling

  5. 5

    Cut each roll in half to serve

  6. 6

    If making this in advance, sprinkle a little lemon juice over the lettuce to stop it discolouring in your lunch box

  7. 7

    You can add mayo or dressing if you like, just drizzle a bit over the filling before rolling

  8. 8

    Use any filling you like, maybe prawns in marie rose dressing, sliced crabsticks, avocado, red onion, apple, cheese whatever you like!
