Grilled Cilantro Chicken with Spicy Thai noodles

Ingredients

  1. 1carrot, matchstick
  2. 1Red bell pepper, sliced
  3. 3Green onions, chopped
  4. 2garlic cloves minced
  5. 2 tbspolive oil, extra virgin
  6. 4boneless skinless chicken breast
  7. 3/4 lbany long skinny noodle (spaghetti, or any other type)
  8. Chicken Marinade
  9. 3 tbspolive oil, extra virgin
  10. 1Salt and Pepper (to taste)
  11. 4Garlic cloves minced
  12. 1/4 cupCilantro chopped
  13. 1Zest from 1 lime
  14. 1Juice from 1 lime
  15. 2 tbspRice Vinegar
  16. Sauce for Noodles
  17. 1 tbspFresh ginger,grated
  18. 1zest from 2 limes
  19. 1juice from 2 limes
  20. 1/4 tspRed pepper flakes
  21. 1salt and pepper to taste
  22. 1 tbspRed or green Thai curry paste
  23. 1 1/2 tbsprice Vinegar
  24. 1 cupchicken stock

Cooking Instructions

    In a large bowl bring together chicken marinade and marinade chicken for 1 hour or overnight (longer the better)

    When ready, grill chicken until cooked through and set aside to rest.

    In a bowl, mix together the noodle sauce until the curry paste is mostly dissolved

  4. 4

    In a pot, cook spaghetti noodles al dente, strain and leave in colander (so you can do everything else in the same pot 😊)

    In the same pot, heat 2 tbs in oil and add minced garlic. Cook 1 min,then add your pepper and carrots

  6. 6

    Add the noodle sauce to the pot, and let simmer 2 min, then add cooked spaghetti back into the pot

    Toss the spaghetti, veggies and the sauce together and add chopped green onions.

    Slice up your chicken and serve on top of spaghetti 😆😊
