Ground Turkey Enchiladas

My Aunt Carmen made this recipe all the time when I lived in Charlotte with her. I tried looking for her recipe but she didn't have it written down she just knew it by memory. So before I left I wrote down all the ingredients I watched her use and eyeball the measurements and go by taste.

My Aunt Carmen made this recipe all the time when I lived in Charlotte with her. I tried looking for her recipe but she didn't have it written down she just knew it by memory. So before I left I wrote down all the ingredients I watched her use and eyeball the measurements and go by taste.
Cooking Instructions
- 1
Preheat oven to 350°
- 2
Chop onion and bell pepper and olives. Set aside.
- 3
In a skillet on medium heat add ground turkey, onion and bell pepper. Cook until no longer pink. Drain.
- 4
Return meat mixture to pan and add refried beans and a half of the hot enchilada sauce and half of the mild. Add more sauce if the mixture is too thick to get your desired thickness. If you like more heat like I do you can add more of the hot sauce. If you like it more mild use less of the hot sauce and more mild sauce. You can adjust it to your liking.
- 5
Grab one tortilla and take a heaping spoonful of the meat mixture and spread in the middle of the tortilla. Sprinkle cheese on top and add olives if using them. Add a drizzle of either mild or hot sauce on top of the meat mixture.
- 6
Roll tortillas and place seam side down in a greased baking dish. Do the same for the rest. When pan is full, pour enchilada sauce over the top and sprinkle with cheese
- 7
Bake for about 30 mins. Let cool for 5 mins. Serve and enjoy!
- 8
This makes a lot of meat mixture. I could only make so many in this pan. If you have any left over just store in an air tight container and freeze for next time. To reheat pour meat into a hot pan on medium heat and start with steps 5-7.

Turkey Enchiladas Turkey Enchiladas
This one was an accident. I pulled turkey out to thaw, and once dinner time came around the original plan didn't sound good to either of us. We had all the stuff for enchiladas, and decided to try it with turkey! It feels less heavy with turkey. But don't season it too much! szhawna.garcianixon -
Turkey Enchilada Turkey Enchilada
I found this on the Internet. But we didn’t follow the recipe of course. This was our first time making it. I have done as the comment suggested and doubled the sauce because the original sauce made was not enough. I can always find a good recipe it is my talent but, my husband is the better cook… Katatonickat -

A recipe I threw together out of leftover ingredients in the fridge. It's OK if you don't have any enchilada sauce as marinara with some spices will suffice, or leave them without the sauce for some delicious toquitos! Lamo's Kitchen -
Chicken or Turkey Enchilada Casserole Chicken or Turkey Enchilada Casserole
This casserole defines “comfort food” for me! I usually make this recipe using leftover turkey after Thanksgiving, but you can easily use leftover rotisserie chicken breast and make it any time. It’s an easy recipe that your family or guests will enjoy. I use mild enchilada sauce, salsa, and chilies. You can ratchet up the heat levels to whatever you are comfortable with. Adam Janowski -
