Ingredients

  1. 2 canwhole green chilis, drained (7oz.)
  2. 8 ozMonterey jack cheese, shredded
  3. 8 ozLonghorn or cheddar cheese
  4. 2 eacheggs, beaten
  5. 5 ozevaporated milk
  6. 2 tbspall-purpose flour
  7. 1/2 cupmilk
  8. 1 lboptional; hamburger meat (pre-browned)

Cooking Instructions

    Preheat oven 350°F.

    Spray 9x13 baking dish with oil spray.

  3. 3

    Place 1/2 green chili's evenly on bottom of dish, sprinkle with 1/2 Jack and 1/2 cheddar. Cover with remaining chilis. [Optional: you can add hamburger meat to the layers.]

    In a bowl, mix eggs, milk, evaporated milk, and flour. Pour over chilis. Bake 25 minutes.

    Sprinkle remaining g cheese and bake an additional 10 to 15 minutes.

I love making this easy casserole and it’s a favorite with both my family and at potlucks. I do add a couple of dashes of Tabasco sauce to the milk mixture.
