A family favorite! Reminds us of the refried beans we used to get at a restaurant called Ramon's.

Cover beans with warm water. Leave in a warm place for 12 - 24 hours. Beans will swell, so make sure your container has room for expansion.

Drain, rinse, and place beans in a large pot. Add water to cover beans. Bring to a boil and skim off foam.

Reduce heat and add optional garlic and salt. Simmer, covered, for 4 - 8 hours. Check occasionally and add more water as necessary.

Mash bean with a potato masher (I prefer to blend them in my food processor for a smooth consistency).

Heat oil of your choice (lard, coconut oil, bacon grease, etc.) in a cast iron skillet. Add beans and cook, stirring constantly, over medium heat, until all the fat is incorporated. Enjoy!
