Pea Salad in a Flash

I opened a can of peas tonight just to give my 9 month old peas with his dinner, yep an entire can just to feed a kid about 2 tbs. See, my husband doesn't like peas and I don't eat until after the little man is in bed so they were all for him. Lol. After he was in bed I decided I wanted pea salad, but I didn't have everything that normally goes into the version I was taught to make. You my mom so this is kind of a modified version with what I had on hand thrown in.

Ingredients

  1. 1 canunsalted peas - drained
  2. 2 slicesdeli honey ham - diced to 1/4" pieces
  3. 2 tbsmayonnaise
  4. 1/2 tspapple cider vinegar
  5. 1/4 tspsugar
  6. 1/4 cupshredded cheddar (I only had finely shredded)
  7. 1 pinchonion powder
  8. to tastesalt and pepper

Cooking Instructions

  1. 1

    Mix all ingredients in a bowl with a lid until well combined. Careful not to mash your peas.

  2. 2

    Cover. Refrigerate until ready to serve. It will thicken up and get even tastier the longer it's chilled. Enjoy!
