Ingredients

  1. 1/2 cupGranulated sugar
  2. 2 eacheggs
  3. 1 tspvanilla
  4. 1 1/2 cupAll purpose flour
  5. 1 tspBaking soda
  6. 1 tspCinnamon
  7. 3 cupOld fashioned oatmeal
  8. 1 cupButterscotch chips
  9. 1/2 cupButter flavored shortening
  10. 3/4 cupFirmly packed brown sugar

Steps

  1. 1

    Pre-heat oven to 375°F

  2. 2

    Beat together shortening and sugars until creamy

  3. 3

    Add eggs and vanilla beat well

  4. 4

    Place butter and sugar mixture in the refrigerator while preparing other ingredients

  5. 5

    Whisk together flour baking soda and cinnamon. Stir together until no streaks remain

  6. 6

    Stir this mixture into the butter mixture

  7. 7

    Stir in the oats and butterscotch mix well

  8. 8

    Drop rounded tablespoon falls onto an ungreased cookie sheet

  9. 9

    Bake for 10 to 12 minutes or until golden brown

  10. 10

    Cool for 1 minute on the cookie sheet then remove to a wire rack
