Ingredients

4 servings
  1. vegetarian lotus root and onion
  2. 2 cupsmall dice onion
  3. 2 cupsmall dice lotus root
  4. 1 tbspoil
  5. 1 cupwater
  6. 4 tbspkorean sesame bean paste
  7. optional
  8. 1 cupcooked mince pork
  9. garnish
  10. 1 tbspfresh coriander or cilantro

Steps

  1. 1

    With sesame oil pan fried ground pork till brown and cooked then set aside

  2. 2

    Then with oil saute onion and lotus root for 2 minute then add water and simmer for 8 minute for crunchy bite or for softer lotus root simmer for 15 minute

  3. 3

    add cooked ground pork and korean bean paste and mix well saute for another 3 minute

  4. 4

    off heat and serve cold or hot top cilantro
