Ingredients

  • 2 cupItalian Breadcrumbs
  • 1 cupRomano Cheese
  • 1 tbspSalt and Pepper
  • 1 tbspMinced Parsley
  • 4 cloveChopped Garlic
  • 6 pieceBoneless Skinless Chicken Breasts
  • 1/2 cupExtra Virgin Olive Oil
  • 2 cloveMashed Garlic
  • 5medium Fresh Lemon Juice
  • 1/4 tspCrushed Red Pepper
  • 1/3 cupExtra Virgin Olive Oil
  • 1/4 cupWater
  • 12large Wooden Skewers

Steps

  1. 1

    Mix together Breadcrumbs, Ramano Cheese, Salt and Pepper, Parsley and Garlic.

  2. 2

    Slice chicken into strips (4 or 5 per breast)

  3. 3

    Dip chicken into oil then breadcrumb mixture to coat

  4. 4

    Thread chicken onto skewers and place on baking sheet lined with tin foil and sprayed with vegtable oil.

  5. 5

    Bake at 350° for 30 to 35 minutes. If chicken is thick additional time may be needed

  6. 6

    While baking mix lemon juice, salt and pepper, mashed garlic, red pepper, water and salt and pepper to taste
