Ingredients

  1. 2 cupflour (1 1/2 cup whole wheat)
  2. 1 cupquick cooking oats (quick 1 min)
  3. 1 tspbaking powder
  4. 1 tspbaking soda
  5. 1 tspsalt
  6. 1/2 cupsugar
  7. 1/2 cupfirmly packed brown sugar
  8. 1 tspcinnamon
  9. 3large eggs
  10. 1 cupvegetable or canola oil
  11. 1 tspvanilla
  12. 3 cupshredded zucchini
  13. 1 cupchopped walnuts

Cooking Instructions

    Mix all dry ingredients together in a large mixing bowl (kitchen aide bowl).

    Make a well in the center of the dry ingredients. Whisk in moist ingredients. Stir until just moistened.

    Add zucchini and walnuts. Stir thoroughly. Make sure to scrape the very bottom of the bowl with spatula, as dry ingredients stick to it often.

    Spread into greased 9 x 5 x 3 loaf pan. (Makes one loaf)

    Bake at 350 for 1 hour and 15 min. Check first at 1 hour. If knife comes out clean, it is done.
